Ingredients (serves 4)

  • 2 medium eggs
  • 2 Tbsp Fat Free apricot jam
  • 200g dried apricots
  • 3 Tbsp apricot brandy

Method

Divide egg white and yolk. Beat the egg white stiff with the jam. Puree the apricots with the brandy in a food processor. Add this to the egg white and mix altogether. Fill serving cups. Also delicious with a dab of reduced fat vanilla yoghurt and roasted almonds.
