Ingredients (serves 4)

  • 4 hard-boiled, peeled eggs
  • 8 slices of Salt Reduced/Low Fat bread
  • Polyunsaturated margarine or Low Salt Tomato sauce
  • Lettuce
  • Tomato


Cut the eggs into slices with the egg cutter. Spread margarine on the bread and cut the slices diagonally Cover half with lettuce, tomato and egg. Place the rest of the bread on it. Serve the sandwich in a napkin.
